I think everyone should have a good mac & cheese recipe in their back pocket. Whether you’re entertaining unexpected guests, hosting, or craving something comforting, it’s a dish that’s always quick, easy, and lovely to make.
With the cozier seasons approaching, I thought this would be the perfect recipe to share. Although, let’s be real, mac & cheese is welcome in my kitchen all year round. 😏
What I love about this recipe is how customizable it is. Switch up your pasta shape, experiment with different cheeses, and adjust the consistency to your liking. Whether you prefer your mac & cheese extra creamy and gooey or a little thicker and heartier, this is a wonderful foundation to make your own.
And the best part? Everything comes together in ONE pot! YESSSS! 🙏

ONE-POT MAC & CHEESE
Ingredients:
3 cups dry pasta of your choice (I used cavatappi)
2 cups chicken broth
1¼ cups whole milk or heavy cream
1 cup sharp cheddar, shredded
1 cup aged white cheddar, finely shredded
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
½ tsp black pepper
Salt to taste
Extra milk, as needed
Instructions:
1. Add your dry pasta of choice to a large pot. Cooking times vary by shape.
2. Pour in broth and milk (or cream).
3. Add seasonings and stir.
4. Bring to a gentle simmer over medium heat.
5. Cover and cook about 8–12 minutes, stirring frequently. Check for doneness; add a splash of warm broth or milk if it gets dry.
6. Once tender, TURN OFF THE HEAT before adding cheese.
7. Gradually stir in both cheeses. Be patient as they melt! Avoid reheating, which can make the sauce separate or turn grainy.
8. Add a splash of milk to reach your preferred consistency.
9. Taste, adjust seasoning, and enjoy!
A little kitchen tip: Different cheeses melt differently, so experiment with combinations you enjoy! Freshly shredding your cheese can also help it melt more smoothly.
Save this recipe for your next cozy evening or little gathering. ❤️
